Hand Harvested and organically grown. 100% destemmed. Fermentation on native yeasts, followed by full malolactic by naturally occurring bacteria. Racked three times prior to bottling. Total 50ppm so2.

Hand harvested, organically farmed grapes, indigenous yeast, naturally occurring lactic acid bacteria and minimum effective SO2.

There is a mix of red and dark fruit, red plum, blackberry, and dark cherry to be more exact. Followed by leather and mushrooms. On the palate the red plum is confirmed with soft tannin structure offering a lengthy delightful finish.
